Memorial Day Sunday meal!

Stuffed Jalapeño Peppers 

Attempting to make your Sunday evening a tad better with this delectable preparation. We love a batch of stuffed peppers with an elaborate weekend meal. Its an amazing accompaniment to a Sunday meal of Rajma, Kadhi or Gatte. This easy and not so easy scrumptious dish only needs peppers, potato and some spices. Though the stuffing is super easy to put together and is ready within minutes, cooking peppers takes patience, you have to slow cook it from all sides to completely & evenly cook it to a grayish black color without burning it. Hopefully this pictures motivates you to give it a shot, absolutely love this one! 

Recipe: 
▪️Boil 4 large potatoes, cool and mash completely 
▪️In mustard oil, add mustard and fennel seeds and let them crackle. 
▪️ Add pinch of asophoetifada and turmeric powder, stir for a minute and then mix the mashed potatoes ▪️Let it cook together for 4-5 minutes and then add mango powder, garam masala powder and salt. Let it cool 
▪️Slit the peppers vertically and remove the seeds (please don’t forget to use gloves while deseeding it)
▪️Stuff the potato filling in it and fry it in mustard oil in low-medium heat, till it is completely cooked on all sides (almost grey)
And it’s ready to serve!

Egg masala Recipe 

▪️In hot oil, add 1 tsp cumin seeds and let them crackle 
▪️Mix in thinly sliced onions and garlic and sauté on a medium flame till the onions turn translucent
▪️Add the only sliced tomatoes, slit green chilies and ginger juliennes, cook together till tomatoes are mushy and the raw smell goes away 
▪️On the side, in a bowl, mix coriander, turmeric and cured chilli powder with some water to make a paste 
▪️ Once the tomatoes are completely done, add the masala paste and cook for another 5-6 minutes 
▪️Add salt and fresh chopped cilantro 
▪️Lastly toss boiled eggs in some oil with turmeric and red chilli powder and add to the curry or just add as is 
Enjoy hot with chapatis ✨

Sponge Cake 

Happy Mother’s Day Instafam ! ✨

Reminiscing this good old sponge cake recipe from my mom today. All the desserts in the world don’t match upto a simple, lightly sweetened home baked sponge cake, wouldn’t you agree? What’s your favorite mom’s recipe? 

Recipe:
▪️Mix 1.5 cups of flour (cake flour or all purpose flour) and 1 tsp of baking powder. Sieve them both together 2 or 3 times to mix thouroughly. 
▪️In 3/4 cup butter (100/120 grams) add 3/4 cup sugar and mix them together with an electric blender for 3-4 mins till its light and fluffy. 
▪️Take 3 eggs and 6 drops/ 1tsp of vanilla essence. Beat them for 8-10 mins till thick and the batter dropped on top doesn’t sink in. Beat the whites first and then add the yolk for the perfect fluffiness.
▪️Start folding the flour in with the eggs in parts with a wooden spatula. The idea is to not mix vigorously so that air created inside doesn’t get released - which makes the cake spongy. 
▪️Add 1/4 cup/ 6-8 tbsp cold milk gradually to reach the right batter consistency.
▪️Grease the pan with oil and some dry flour so that the cake doesn’t stick at the bottom. Bake it for 35-40 mins at 350 degree Fahrenheit. 
▪️Check with a toothpick at 30 mins to make sure it’s fully done otherwise bake for another minute or two. Cool and enjoy the indulgence

Is there any good replacement for warm and healthy parathe on a weekend morning? Think not!! Stuffed parathe with a side of yogurt, some butter and a pickle are my ultimate comfort food. I also tried this amazing tamatar chutney here and oh my it took this meal to the next level! Like there was another reason needed to make this meal, but did you know that Cauliflower is anti-inflammatory and antioxidant-rich, and may boost both heart and brain health! Such an easy and nutritious meal has me craving more!

Jeera Aloo

One of the easiest and most loved Indian dish - Jeera Aloo is often made as a side dish with any hearty meal served along with roti/chapati. Also known as a bachelor’s dish, it is the definition of comfort food, an easy 20 minutes preparation and voila! 

▪️Boil 4 medium potatoes completely, cool, peel and chop them into bite size pieces 
▪️ In 3 tbsp ghee, add 2 tsp jeera/cumin seeds and let it crackle. Throw in 2-3 finely chopped green chillies and sauté for a minute or two 
▪️Mix in the spices, 1/2 tsp turmeric (optional), 1/2 tsp red chilli, 1/2 tsp cumin powder. Sauté for couple of minutes then mix the potatoes along with salt
▪️Mix with a light hand so as to not break potatoes too much, let it fry around the edges till lightly browned - 5-7 minutes 
▪️Add 3/4 tsp dry mango powder and lots of chopped fresh cilantro 
▪️Enjoy hot with your meal or on its own with some daal and chapati.

Sol Kadhi 

I am very new to the idea of sol kadhi but oh boy what an amazing addition to the palette! The explosion of flavors in this maharashtrian drink keeps you wanting more. And did I mention, took me 30 minutes to make with such few ingredients. A MUST have for the summer season! 
I made fresh coconut milk at home, homemade coconut milk is magical and you wouldn’t want it another way once you have this. 

Recipe: 
▪️Cut fresh coconut into small pieces, add 1 cup of chopped coconut to the blender along with 3 cups water and blend to a fine consistency. Strain this liquid and add another cup of water to the coconut from the strainer and blitz it really well. Strain it again. Keep the milk aside. 
▪️ Gently pound the coriander, green chillies and ginger in a mortar and pestle to extract the oils and flavours before adding them to the sol kadi 
▪️Take a large mixing bowl, and add pounded coriander, green chillies, ginger, salt and few pieces of Kokum and mix well. If you don’t have kokum, tamarind or raw mango is a great option too! 
▪️I also added a piece of beetroot because kokum does not have a very dark color (optional)
▪️Leave the mixture in the refrigerator for a few hours for the flavours to infuse. Strain once chilled. 
▪️On the side, prepare the tempering. In oil, add a pinch of asafoetida, mustard seeds, cumin seeds, sesame seeds, once the seeds crackle mix in curry leaves, green chillies and add it to the refrigerated kadhi! 
Enjoy with a hot bowl of rice 🍚 or as a cool drink in the summer heat! 

Ingredients: 
Kadhi: 4-5 pieces of kokum, warm water, 2 cup coconut milk, handful of coriander leaves, 3-4 cloves garlic lightly pounded, 2 slit green chillies, 1 small piece of beetroot
Tempering: 
1 tbsp oil, pinch to asafoetida, 7-8 curry leaves, 1 tbsp seasme seeds, ¼ tbsp mustard seeds, ¼ tbsp cumin seeds, green chillies  to taste

Recipe: 

Marinate chicken with yogurt, freshly grated ginger and garlic, turmeric, lime juice and salt. Mix well and let it sit for 30 minutes or more 

▪️In hot oil, add all the whole spices, mix for a few minutes and add the marinated chicken. 
▪️Sauté the chicken for 10 minutes and then add coriander powder, cumin powder, red chilli powder and fry for another 5 minutes 
▪️Next add the nut paste of cashews and almonds ( soak in warm water for 15 minutes and then make into a creamy paste) and sauté for a minute 
▪️Add the fried onions and cook together for 5 minutes 
▪️Mix in warm water and salt to taste. Cover and cook for 15 minutes 
▪️Finally mix in cream, more fried onions and green chillies. Cook for 5 minutes and you are good to go! 
Serve with hot chapatis 💛

Ingredients: 
Marination- 1 kg chicken, 1/2 cup yogurt, 1 tsp freshly grated garlic, 1 tsp freshly grated ginger, 1 tsp salt, 1 tsp lime juice, 1/2 tsp turmeric. 

Curry- 2 cinnamon sticks, 5 cardamom, 5 cloves, 2 bay leaves, 8 black peppers, 1 tsp cumin seeds, 4 tbsp cooking oil, 1 tbsp coriander powder, 1 tsp red chilli powder, 1 tsp cumin powder, 12 cashews, 12 almonds, 1.5 cup fried onions, 1.5 cup water, 1/4 cup cream, 4-5 slit green chillies and salt to taste!

Gujiya Mawa (filling) 

My love for gujiyas is eternal but I equally enjoy eating the stuffing on its own, which is sooo tasty! I wanted to share this family recipe which is my absolute favorite and can be enjoyed within gujiyas ofcourse, as mawa ladoos or like a halwa by itself when you have some extra leftover!! ☺️ 

Hope you all are having an amazing festival 🌈💦✨

Recipe:
▪️Roast 350 gms mawa VERY WELL till it’s slightly colored and keep aside 
▪️Roast 1/4 cup Rawa/sooji in ghee and keep aside 
▪️Add some more ghee to the pan and roast finely chopped or powdered nuts, desiccated coconut, and chironji 
▪️Mix all the ingredients and add 10-12 green cardamom powder, 15-18 raisins along with 3/4 cup sugar while warm. 
▪️Make ladoos while warm or enjoy it as is.
