There’s something magical about a Sri Lankan beetroot curry. 

I don’t know if it’s that deep crimson shade or the mere simplicity of it that just draws you to it. 

It’s probably one of the easiest veggies to cook in Sri Lankan cuisine, using the cold method as for all root vegetables. The sweet earthiness of its flavour against the creamy- rich coconut milk is just soothingly luxurious.

I love how it just bleeds it’s colour onto everything on your plate and makes any rice and curry combo colourful and appealing.

Basic Sri Lankan Pumpkin & Coconut Curry (MILD) 🎃 🥥 🌶 

This curry is creamy, coco-nutty,mild and super healthy! 

Rich in vitamin A, it packs vitamins that boost immunity; perfect for these days. 

It promotes gut health and is full of fiber.
It’s low in calories and this means you can enjoy it on its own or pair it with steamed rice... 

If you’re not a fan of the skin you can remove it before cooking but I love pumpkin skin-on. The skin is rich in antioxidants and are loaded with nutrients that promote healthy skin. 

Please note that not all pumpkin varieties can be enjoyed skin-on as the skin may be tougher in certain varieties, to breakdown in cooking (I’ve used a SriLankan red pumpkin here).

Really quite simple and quick to make this one! 

If you’ve got some fried beef or chicken leftover, simply toss it in some onions and aromatics and repurpose it as an entirely new dish. If you haven’t got any fried chicken or beef leftover, you can deep fry some and use it to make this dish. 

I love having this with instant noodles but it goes well with almost anything! Rice, noodles, roti, flatbreads, Kadé paan, string hoppers... the list is endless.

Sri Lankan Tuna & Potato Cutlets 🔥
(Makes approx. 30nos)

Ingredients 

For the filling: 

•Canned Tuna (drained) -2 tins
•Boiled, mashed/ chopped potatoes- 3 large 
•Finely chopped garlic - 1-2 large cloves
•Chopped onions - 1 medium 
•Chopped green chillies 4-5
•Chopped cilantro (optional) 1 small sprig 
•Finely Chopped curry leaves 
•Mustard seeds 1/2 tsp 
•Lime juice - a spritz 
•Chillie flakes - 1 tbsp 
•Turmeric - a pinch 
•Pepper - a pinch 
•Salt- to taste 

For the coating: 

•1 egg - beaten 
•Fine Breadcrumbs 
•Flour 

•Oil for deep frying 

Method: 

1. Boil the potatoes, peel and mash. 
If you prefer to have more of a “bite” to the cutlet, you may roughly mash or chop the boiled potato. I prefer a smoother filling so I mash it all up. 

2. Drain the tuna 

3. In a frying pan, add a tbsp of oil and fry the curry leaves, mustard seeds, garlic, onion, green chillies and coriander. Add a sprinkle of salt and once they’ve cooked down a bit, add in the tuna. Mix well. 

4. Add in the Chillie flakes, pepper & turmeric and mix well. You may adjust the chilli as per your taste and tolerance to heat. 

5. Incorporate the potatoes into the tuna mixture and season with salt (to taste)

6. Add a spritz of lime juice to bring out the flavours. Mix well. 

7. Take the filling off the stove and allow the filling to cool down completely. 

8. Once the filling has cooled down, take small portions and mould into  small balls.

9. Coat the balls in flour, dust off the surplus and dip into beaten egg. Next, coat the balls with the bread crumbs and mould into round shape (in the palm of your hand) to form a firm coating. 

10. You may store the cutlets in the freezer to fry later or directly fry them. If you’re using them later, fry them straight from freezer to hot oil. 

11. Deep fry in hot oil. Gently fry the cutlets and do not overcrowd the pan. Once they’ve turned golden brown, drain onto some kitchen paper and enjoy “hot-hot” with some tomato ketchup.

RECIPE :
Cream of peas 🌿 
(Serves 6-7) 

Ingredients: 

•canned green peas - 2 cans 
•chopped onions - 1 large 
•chopped white of leek - 3 -4 inches 
•chopped garlic - 3 large cloves 
•bouillon cube @knorrsrilanka -1 
•butter @kotmale_sl -1tbsp 
•chopped parsley for garnish 
•cooking cream @anchorfp.sl to finish 
•salt & pepper to taste 

Method: 

Sautée some butter in a deep pan and fry off the chopped garlic, onions and white of leek. 

Add in the drained, canned peas and the bouillon cube, and sauté for a few minutes till all the veg is cooked through. 

Add 3-4 cups of water. Simmer on low heat to reduce the soup for 15-20mins. 

Once the soup has simmered down strain it into a bowl and use the cooking liquid to blitz the peas up in a blender. Alternatively use an immersion blender. Blend till smooth and return to the pot. 

Heat gently until it reaches a boil,  add the cooking cream to finish the soup. 

Add salt & pepper to taste and finish off with some freshly chopped parsley. 

Serve warm with crispy croutons or warm garlic bread 🌿 🥖
