Rose coconut Laddoos..!

Maitreyi was craving for her favourite pink laddoos today!
Fortunately, I had stocked up on desicated cocont during my last grocery run.
And tadaa...
These instant, melt-in-mouth Laddoos made with only 3 ingredients, dessicated coconut, milk powder and rose syrup were ready in no time!

And oh! Isn't this a perfect last minute dessert solution for this festive season!!

Ganpati Bappa Morya 🙏❤️

Stuffed Farali Pattice #recipealert

The festival of Hartalika is celebrated in Maharashtra a day before the arrival of our beloved Ganpati Bappa.
On this auspicious day, we worship Lord Shiva, Goddess Parvati and Lord Ganesha.

Married women usually observe fast on this day and perform a Pooja for the wellbeing and longevity of their husbands.
Many unmarried women also keep this fast so that they get blessed with an ideal husband just like Goddess Parvati got lucky with Lord Shiva!!

I made farali pattice today (even though I'm not fasting) for our evening, tea time snack.
These addictive, and guilt-free pattice were happily scarfed down by my family members and trust me they make a great snacking option even for non- fasting days!!

If you too wish to relish these moreish gluten free tikkis, here's a quick recipe
Ingredients
For the outer cover
- 3 boiled potatoes
- 2 heaped spoons sago flour
- 2 heaped spoons popped amaranth
- salt to taste

For the filling
- 2 spoonsful dessicated coconut
- 2 spoonsful peanut powder
- 2 spoons finely chopped coriander
- 1 spoon raisins
- 1 finely chopped green chilli
- black salt, sugar, lemon juice for taste
- 2 tbsp ghee for shallow frying

Method
- Grate boiled potatoes, add sago flour, salt and popped amaranth.
- Knead it into a dough and keep aside
- In a bowl mix together all the ingredients for filling
- Take a small ball from the dough and make a dent in the center using your thumb
- Place the mixture in it and cover it to make into a tikki shape.
- Heat ghee in a pan
- Shallow fry the pattice on both the side till golden brown.
- Serve hot with green chutney

Our Ganesh Chaturthi preparations are in full swing and I'm so excited to prepare a variety of delicacies for Bappa...
How about you??

Helloz my Instafam!

First of all a big big Thankyou for sticking by and for checking on me..🙏

I know its been long since I posted here.
But trust me, I thoroughly missed you guys and IG every single day..

I promise to be active here as much as possible and catch up with all the yummminess I've missed all these days.

Here's a quick, simple and light on stomach monsoon special, healthy beetroot kadhan/saar which I've made today and planning to savour it with pohe chivda for my evening snack!

Beetroot kadhan is a traditional Maharashtrian recipe made with beetroot, buttermilk and tempered with an aromatic tadka!
This kadhan tastes amazing with rice, but I love to savour it as a soup instead, especially during such nippy monsoon evenings.

And the best part is, Maitreyi absolutely loves this healthy soup.

Here's a quick recipe of this flavorful saar

- Pressure cook 2-3 medium sized beetroots (cubed) with 2-3 cups water for 4-5 whistles on medium flame.
- Once the beetroot is well cooked, strain the water and transfer it to a pan.
- To it add 2 cups buttermilk, salt, sugar as per taste and cook for around 5-7 mins till the mixture comes to a boil
- In a small wok, heat 1 tbsp ghee.
- Add cumin seeds, pinch of hing , ginger garlic paste and temper the saar with it.
- Garnish with fresh coriander leaves and serve hot

P.S Use the boiled beetroot cubes to make koshimbir or beetroot coconut milk curry.
