Don039;t forget to save this recipe for later 😋 Ingredients: 1 & 2/3 cup plain Flour, 1/2 cup Cocoa Powder, 1/2 cup Brown Sugar, 1 tsp Baking Powder, 1/2 tsp Bicarbonate Soda, 1/4 tsp Salt, 1 cup soya milk, 1 tbsp Cider Vinegar, 1 & 1/2 tsp Vanilla extract, 1/3 cup Olive oil, 4 tbsp Maple Syrup, fresh raspberries Method: ♡ Preheat the oven 160°C Fan (350°F or 180°C) and grease a muffin tray with vegan spread. Make buttermilk by mixing milk with vinegar and set aside for 5 mins. ♡ Sift the flour , Cocoa, baking powder, Bicarb Soda and salt into large bowl. Ingredients: 4 tbsp Kape Foods Cashew Butter 5 tbsp Nutritonal Yeast 0.5 tbsp Light Olive Oil 300g Portabello Mushrooms 250g Frozen Garden Peas 1 Vegetable Stock Cube 200ml boiling water 1 small Onion 2 cloves Garlic Pepper to season (optional) 250g Dry Pasta (any type/shape) Method: • Finely dice the onions and garlic and roughly chop the mushrooms. Create the concentrated stock by dissolving the stock cube in the boiled water. • In a large saucepan, add the pasta and fill with water till it reaches approximately 2 inches above the pasta level. Bring to the boil and then lower the temperature and cook as per the instructins on the packet. • Heat a large frying pan with the olive oil, on a medium heat, then add in the onions and saute till they are translucent. Add in the garlic and stir with onion for around 3 minutes till cooked through. • Stir in the garden peas and cook for 5 minutes. Add in the mushrooms and cook till mushrooms become soft and release their juices. Add in the nutritional yeast and mix well. • Then add in the stock and give it all a good stir. Finally add in the cashew butter and stir well, watching the sauce get even creamier. • Drain the pasta and add it into the sauce. Felt so good... Being back in the gym this week🤗. Started off with a Pull Day Tuesday and then Legs yesterday. Took it easy of course, especially after two weeks of not lifting!! I listened to my body... My back was hurt so I did nothing strenuous for a week. The following week I did some light yoga and carried on with my normal steps. By the end of that second week I could take my yoga poses further and I knew I was on the mend 🙌 If I039;d not rested I would have delayed recovery or worse still, made it worse 😬. Old me would have pushed through pain 🥴 Comment below if you039;ve ignored pain and ploughed on as normal?

Throw back to July 2019 when I was still so obsessed with how I looked. Gorgeous holiday in Menorca, one the kids still talk about now and one we all loved 😍...... But for me, I was so hell bent on looking "skinny!" I didn039;t eat breakfast and just drank coffee, my first meal was a little tin of tuna salad (yes pre-vegan days) at 12pm that was 250 kcals. I039;d have an ice lolly instead of ice cream because it was less calories and I039;d watch my plate at dinner time to not put too much on it. All to ensure I had as flat a tummy as possible 😒 Each day at the beach/pool I would comment on other women039;s bodies and compare to mine. I039;d wonder "how are they so confident," "I wish I had her abs," "is my tummy like hers?" No one should feel hungry on holiday or feel so self conscious that it affects your enjoyment! I039;ve always had an up and down relationship with food. I039;ve never been fully happy with my body. Difference now is that I understand my body more. ♡ I enjoy eating and do not restrict myself 😋 ♡ I enjoy working out and do it for Strength and Fun 👊 ♡ I enjoy being active, I walk more than I used to. ♡ I know that I don039;t have to be skinny! ♡ I am OK with some of my clothes feeling tighter and not wearing them again 😜 I hope that I can make it to a summer holiday this year and I look forward to putting a bikini on again and enjoying the whole experience 😊 My point is: ◇ Please don039;t suffer to get that beach body. What treats to bring to a Practical Workshop... Chocolate Chunk Blondies of course 😋 Ingredients: 1 tbsp Ground Flaxseeds, 3 tbsp Water, 1 Cup Plain Flour, 1/2 tsp Bicarbonate Soda, 6 tbsp Light Brown Sugar, 1 & 1/2 tbsp Granulated Stevia, 6 tbsp Vegan Butter/Spread, 1 tsp Vanilla, 2/3 Cup Chopped Dark Chocolate Method: 💜 Preheat Oven to 160°C Fan (180°C / 350°F). Grease and line an 8 x 8 square cake tin. Make the flax Egg by mixing flaxseeds with water and set aside for 5 minutes. 💜 Beat the spread/Butter with the sugar/sweetener for a few minutes till well combined and a thick creamy texture. Sift Flour and BS into a large bowl and then mix in the vanilla, creamed mixture and flax egg. Mix together well till it forms a luscious batter. 💜 Throw in the chopped chocolate and stir well to incorporate. Spoon into the tin and spread it evenly. 💜 Bake for approx 15-18 minutes. You don039;t want to over bake these to keep them slightly moist in texture 😘
Do you listen to your body 🧐 So yesterday I hurt my lower back at the gym (the sacrum area just about my tail bone) which has made moving not very pleasant at all 😕. Without painkillers I cried! Now I039;m dosed up on them plus deep heat, I just feel this dull ache. Needless to say I039;m not going to be working out for the remainder of this week 😬 My point is, listen to your body! I felt a twinge in my back doing my last set of the vertical leg press and I stupidly carried on for 3 more reps 🙄. If a client experienced pain I039;d tell them to STOP straight away but I didn039;t do it for myself, which was foolish. Be aware of you body and what it039;s telling you: ◇ If something hurts, Stop✋ ◇ If you feel dizzy, Stop ✋ ◇ If you begin to overheat, Stop ✋ ◇ If you find it difficult to control your breathing, Stop ✋ ◇ If you feel your heart racing too fast, Stop ✋ Take some time to rest and if you still feel bad abort the training. Sometimes just a few minutes rest and you can resume, by adapting the intensity but other times your body is saying, "its time to call it a day mate"
Kisses 💋 for you all Well, if there were any left they would be 😉 Vegan Meringues that are the nicest, lightest, little pops of sweetness that melt in your mouth. Taste exactly how I remember a meringue to taste... Amazing! 1/2 Cup of Aquafaba (the liquid from a tin of chickpeas), 1/2 tsp Cider Vinegar and 1/4 Cup Caster Sugar, food colourings optional. Beat the aquafaba and vinegar for 10-15 minutes till stiff peaks form (do the bowl over head test to be certain 😉) and then gradually add in the sugar, a tbsp at a time. Pipe onto a baking sheet. Bake in a preheated oven at 80°C Fan (100°C / 210°F) for 1 - 1 & 1/4 hours and then open oven door slightly and leave tray(s) in there for a further 1 hour to harden. Quite a lengthy bake time but so worth it! My biggest tip is to place them in an airtight container!!! The first batch I did months ago failed to last 24 hours and turned marshmallow like because my containers were not air tight 🤦♀️ P.s. Banana & Pistachio Muffins 💛 Ingredients: Kape Foods Pistachio Butter 2 Tbsp Pistachios (Shelled) 1 Flax Egg (1 tbsp Ground FlaxSeeds & 3 tbsp water) 250g Self Raising Flour 130g Vegan Butter/Spread (Melted) 240ml Soya Milk (Oat Milk is ok too) 5 tbsp Maple Syrup 1.5 tsp Vanilla Extract 2 large / 3 small bananas mashed 0.5 tsp Bicarbonate Soda Method: · Preheat the oven to 140 degrees C Fan (160 degrees C / 325 degrees F). Grease a 12 hole deep muffin/cupcake tin with oil or vegan butter/spread. · Make the flax Egg by stirring the flax seeds with the water in a small bowl, and setting aside for 5 minutes. Roughly chop the pistachios and set aside. · Sift the Flour and Bicarbonate Soda together into a large mixing bowl. · Mash the bananas and place in a bowl along with the melted butter, vanilla extract, soya milk, maple syrup and flax egg. Stir well till all combined. · Add the wet ingredients into the bowl of dry ingredients and using a spoon, fold the mixture until you end up with a smooth wet batter. · Using an ice-cream scooper/ heaped tbsp, place 1 scoop into each muffin hole. Then, add half a tsp of pistachio butter in the centre of each. Finish off by adding another scoop of batter on top and then sprinkle on the chopped pistachios over the tops. · Bake for 26-30 minutes till golden. STOP✋ Do you feel like you039;re always Running Low on Time?! Everyone has different commitments, different pressures and all round different lifestyles. Some can get to the gym or do a home workout 5 times a week and others struggle to get one in a week 🙆♀️ My Tips for those who struggle are: ◇ Plan your day and, even better, your week. Find at least 3 slots where you can exercise, doing something you enjoy. ◇ On the days you cannot do structured exercise then increase your daily physical activity as much as possible. For example, increase the time of your daily walk, park further away, use the stairs, stand at your desk from time to time, walk while on the phone, etc. ◇ You don039;t have to workout for hours... Simply doing a structured 30 minute workout will be extremely beneficial! ◇ If you are low on time, adding weights to your workouts will make them so much more effective!! ◇ While you039;re working out, unless the call is an emergency then ignore it. Concentrate on You and doing something for Your Health. Making time for others is really important but what is also just as important is to make time for yourself 💛.
