RASBERRY PISTACHIO SLICE
NO BAKE/NO SUGAR/VEGAN DESSERT

Some dishes fail to reach the insta grid, for the simple reason they disappear in minutes🤣🤣, leave aside plating and photographing. 

Hope you all had an amazing weekend, Father's day was fun as kids left no stone unturned to pamper their papa bear.

Created this no bake no sugar vegan, 5 ingredient dessert , which was absolute hit to the extent that it was licked every drop left in the plate. If you are not a dessert person you will love it still.  If you are keen to try, please leave the comments .

Recipe make 6 slices
**Crust ingredients**
1/2 cup raw pistachios
4 to 6 dried pitted dates or 2 fresh mejdool dates
1/2 tbsp maple syrup
1/2 tbsp coconut oil
Process all ingredients in a food processor using pulse function. Tranfer to a parchment paper lined with container or 10 cm springform pan. Press down evenly into a flat crust. Freeze it while working on the filling.
**Filling ingredients**
1/2 cup raw pistachios 
3 tbsp maple syrup
2 tbsp almond milk
Blend the ingredients ina high powered blender to get smooth consistency. And pour over the crust. Top it up with frozen raspberries and freeze it for min 4 to 5 hours or overnight.
Once set, slice and serve with additional raspberry snow.

Jackfruit is not the easiest fruit to prepare.When cut open, you'll see large, pale yellow pods (or bulbs) that contain seeds and are connected to the fruit's core. Ripe jackfruit can be eaten fresh or added to desserts such as ice cream. It's the unripe, green jackfruit that's the most interesting and useful. It has a texture very similar to chicken or pulled pork, which makes it an excellent "vegetarian meat" for curries, salads, and noodles.
Are you fan of jackfruit, if  yes, you got to try the Spicy Srilankan Jackfruit Curry. I have used @ceresorganicsau canned jackfruit to make the curry. The goodness of coconut milk provides it a very creamy flavour. Served it with rice and mango relish.

Thai Chicken Laab or Larb / Thai Chicken Lettuce Wraps

Spring officially starts today ! 
Feel like eating something lighter or low cal, but still loaded with Thai flavours, these Thai Chicken Lettuce Wraps are just fabulous. Juicy chicken mince loaded with  coriander and mint,  thai chilly and lime juice. If you haveall the ingredients, you just need 5 to 10 min to prep up the meal.

If you have tried San Choy Bow, you can say this is Thai version of the dish. I started the process with dry roasting jasmine rice with kaffir lime leaves, galangal and lemon grass,  crushed them in mortar and pestle, make sure to get a grainy texture and not powdery.You can choose to blend using the pulse option in food processor. Once rice is powdered, sautee 500 gm chicken mince in 1/2 cup chicken stock. Once cooked, switch off the gas. In the same pan,add 1 tbsp roasted rice powder and 1/2 tsp red chilli powder followed by 1 sliced red onion and 3 finely chopped scalllions. In a bowl, mix 1 tbsp brown sugar, 1 lime juice and 3 tbsp fish sauce and add to the cooked mince. Finally add 1/2 cup each of chopped coriander and mint. 

Serve it in crisp lettuce leaves or over rice.

Apricot Parsi Goat Curry aka Jardaloo Salli Botti 

Being an Indian immigrant to Sydney, i have developed quite a complex taste palate and easily enjoy multi cuisine food with much joy. But Indian flavours pulls me back quite easily. So today I cooked Salli Boti, a Parsi dish. 

Parsi community in India,  are basically persians settled in india  and  their food have a heavy middle eastern influence. Parsis love eggs, potatoes, fish and meat and they have some amazing dishes around these ingredients. Dhansak, salli botti , patra ni machhni are some of my family fav. If you get a chance to visit Iranian cafes in India, dont miss it !! 

The use of dried apricots to goat dish cooked along caremalised onions, tomatoes  jaggery and cider, gives it a unique flavour. The Parsi garam masala is quite an aromatic spice blend in itself.

Love delicate balanced flavour that Japanese cuisine offers !! Thats why I am always keen to grab authentic japanese condiments at asian grocery stores. The complex umami flavour are to die for, if you try dashi aka japanese seaweed and shiitake mushroom stock, you would taste the authentic flavors.I shared the recipe in my stories if you are keen to learn. Silken tofu coated with potato starch and fried. And finally dashi poured over the crispy tofu.

ROSE TRES LECHES EGGLESS CAKE 

Rakshabandan is the start of Hindu Festive season every year, this year it would be  celebrated on 22nd Aug. A beautiful way to celebrate the bond between brother and sister. And sweets/ desserts definitely make the festivity more special. 
Sydney is still in lockdown, but that should not cease the spirit to celebrate. If you are looking for some food insipiraton, try this "Rose Tres Leches Cake", bet you would make it every year. Its a fun fusion recipe, which is eggless but super moist. 

Recipe- Rose Tres Leches Cake

Ingredients- 

Cake base 
275 gm of yoghurt
3 g baking soda
5 g baking powder
180 gm all purpose flour
115 ml cooking oil
150 gm caster sugar
1 tbsp roohafza or 1 tsp rose essence 

Mix yogurt and baking soda and let it rest for 10 min or until you see it all bubbled up. Mix sugar, oil and roohafza (rose essence). Now sift the all purpose flour and baking soda into the batter. Once all throughly mixed, pour the batter in greased tray and bake for 30 min at 180°c in preheated oven. 

Soaking milk
300 gm milk
150 gm of condensed milk
4 tbsp roohafza or 1 tbsp rose water
115 fresh cream

Mix all the ingredients while cake is in the oven. Once cake is out of the oven, use a chop stick to make holes in the cake. And then pour the soaking milk over the cake. Refrigerate the cake for good 1 hour so milk is absorbed fully by the cake. 

Frosting
1 cup fresh cream
1/2 cup powdered sugar
1 tsp rose water
2 tbsp roohafza or 1 tsp pink colour
8-10 Almonds- sliced
8-10 Pistachios- slices
Dried rose petals

Whip fresh cream and powdered sugar with electric beater, until you get soft peaks. Add rose water and colour to give it the perfect flavouring and colour. Now you can decorate the cake with the rose flavoured whipped cream . Finally  garnish it with silvered almonds, pistachios and dried rose petals.

Maple Oats Cookie

This cookie taste exactly like breakfast bowl of granola. And believe me one cookie with your fav morning beverage be it tea or coffee would be enough to kick start your day. 

Weekday mornings are kind of busy even though we all are working from home while in lockdown. Something that can be made ahead of time is my kind of fav breakfast especially on a weekday. If you are fan of oats this one recipe is for you. 

Recipe - Maple Oats Cookie - 12 cookies

180 gm pitted dates
2/3 rd cup boiling water
6 tbsp maple syrup
6 tbsp melted butter
1 tsp vanilla extract

Soak 180 gm of pitted dates in boiling water. Use fork to make a paste. Then add maple syrup, butter and vanilla extract and mix well. 

2.5 cup rolled oats
1 cup flaked almonds
1/2 cup dessicated cocunut
1/2 cup currants or raisins or sultanas
1.5 cup almond flour
1 tsp baking powder
1tsp cinnamon 

Add all these ingredients to the wet date paste and mix to make a thick batter. 

Roll 12 chunky or 18 small  cookies out of the dough. Bake at 180°C preheated oven for 20 min and let it cool for further 30 min before storing them in a jar.
