We are excited to announce that we have awarded our first ever bursary to culinary student; Ezekiel from the Thistletown Collegiate (TCI) Culinary Arts Program. This year, Quell has proudly been partnering with the @TCIchefs culinary arts program, a high school located in the Rexdale community of Toronto, lead by acclaimed Chef Keith Hoare. The @tcichefs program was created as an initiative to raise funds for students to experience the rich educational opportunity that is International travel. (Be sure to follow @TCIchefs and attend the return of their Chef’s Harvest Party on October 2)

Congrats to Ezekiel for being our first recipient! Ezekiel was selected due to his work on food rescue projects, and dedication to working with TCI charity events and fundraisers. He is headed to the Georgebrown Culinary Management @gbccha program this fall. Our purpose for the bursary has always been to build a path towards positive experiences and equitable opportunities for the future hospitality workforce. We look forward to staying connected with Ezekiel as he continues his post-secondary journey in culinary.

We are grateful for the continuous support and donations we have received throughout the year. If you would love to take part and contribute towards building a path for young culinary talent, please donate through www.quellnow.com/ourfuture.

Starting at such an early age of 13 in the kitchen, Chef @joseph.shawana quickly fell in love with the chef life. He used his Indigenous roots and Classical French techniques towards his cuisine and created delectable dishes with meaningful stories.

As chair of @indigenousculinary he is dedicated to "Changing the narrative of indigenous food", bringing awareness, and reinventing indigenous culinary programs. Valued by connections, he connects his food with his experiences and seeks to create a dish that allows him to bring back those memories.

The story of The Three Sisters is a prevalent one in the indigenous community. There was once three sisters who looked and dressed differently. One summer, one of the sisters, wearing a green velvet dress, went missing. The two other sisters went to look for her and met a little boy nearby, but he did not have an answer for them. The next night, the tallest sister, in brilliant yellow hair and a green shall, also went missing. The only sister left, wearing bright orange, went to seek the little boy and he guided her to the missing two sisters. They had gave up their human lives to help nourish the Iroquois people. The last sister ended up doing the same, as they are all a part of each other and help each other grow. These three sisters are also known as crops: Squash, Corn and Bean. "Corn, beans, and squash all work together to help each other grow and expand. They are helping everybody interpret life, be happy and just keep smiling." - Chef Joseph Shawana

We are so proud of Joseph and his influence in the industry. Take a look at some recent dishes Joseph has created in honour of The Three sisters.

Stay connected and up to date with @indigenousculinary and check out the video where Joseph shares his story and experiences with @torontolibrary https://www.crowdcast.io/e/tpl-joseph-shawana-three-sisters-indigenous-food-stories.

Its summer time and we’re all heading outdoors to entertain, travel, and enjoy the warmth.  For some, this may be cottage getaways or patio hangouts - and this calls for a range of fun and unique outdoor recipes!

Whether you're looking for a delicious feast such as a campfire kabob, or cool and refreshing thirst quenchers, @tawfikshehata and @evelynchick have you covered.

For the June/July edition (pages 79-82), Tawfik shares his delicious campfire recipes such as a Kofta and Stickbread that is inspired by his Egyptian roots. “Tawfik is just as comfortable cooking in the kitchens of top restaurants as he is by a cottage campfire.”

In the August edition (pages 84-87), Evelyn uses her creativity and passion towards creating four fun ice pops. Check out some fun “cold comfort” popsicles that are sure to impress kids and adults with boozy versions.

Their unique and flavourful recipes will leave you hungry, inspired and ready to take on the August summer outdoor meals.

Check out a full range of recipes on @cottagelife new release where Evelyn and Tawfik have featured their recipes!

We are thrilled to announce our co-founder Trevor Lui's latest appointment to join the board of directors at Destination Toronto.

“Having been on the meetings and events side of tourism for over two decades, it was certainly the circuitous route that eventually yielded this great opportunity. As a born and bred Torontonian, I have always marveled at the culture, diversity and flavours that bind this amazing city of communities. I'm honoured to be part of this group led by the great vision and leadership of Scott Beck @scottbinyyz to catapult this beautiful city back on everyone's "must do" list. To have a seat at the table nearly 50 years after my parents chose Toronto as their new home means a great deal to me.”

"Destination Toronto reflects the breadth and diversity of Toronto’s people, places and culture to inspire residents and visitors to meet, visit and explore our city." Whether you are new to Toronto for a visit, or just looking to explore this beautiful city, @destination_toronto is the go-to resource and inspiration.

Please join us in congratulating @trevorlui!

These powerhouses are so much more than "bartenders" and mixologists. They are inspirational, empowering, and innovative industry leaders who continue to pave a path for all aspiring young females in the beverage and hospitality industry.

Evelyn - a creative and innovative entrepreneur who arguably has one of the most successful and beloved cocktail kit businesses in the city.

Christina - a bar owner x 2, a spirits educator, and an influential thought leader in the hospitality industry.

Ren - a diversity and inclusion consultant guiding businesses to be accountable and create safe and welcoming spaces for underrepresented folx.⠀⠀⠀⠀⠀⠀⠀⠀⠀
 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Three very different paths, and all equally inspiring and rooted in hard work, perseverance and love for this industry. Not to mention, they are all amazing humans that are committed to giving back and supporting equity seeking communities.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
@ryhanks recently sat down with @evelynchick, @christinaveira and @beer_diversity to discuss their experiences "breaking beverage barriers in the industry". ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Our Quell Chefs are excited to be partnering with Savour Ontario to bring you a delicious collection of outdoor cooking recipes, tips and food ideas curated for everyone!
Throughout the month, @savourontario will be releasing a new recipe from our chefs and engaging editorials of their memories, stories and experiences cooking outdoors.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
"Cooking outdoors over a fire slows the process down, building anticipation and appreciation. It also fosters community. Beyond cooking, fires are places for storytelling—for sharing the history, lore and ideas that form our most powerful memories. This collection of outdoor cooking recipes, tips and food ideas was curated for everyone—backyard foodies, provincial park campers and seasoned outlanders alike."
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Be sure to follow @savourontario, and chefs @joshnamaharaj, @ridetowander, @chefbashir, @tawfikshehata, @chefjosephshawana to be the first to hear when the recipes are out! PLUS more from friends - @thehunterchef and @rickyandolivia

A lot of the time, we like to romanticize societal standards of beauty and feel less than if we do not align with them.
