Start your weekdays off with a boost of delicious overnight oats with chocolate and orange 🍊🍫 This delicious classic flavour combo works so well as a breakfast! We use fresh chopped orange segments and some grated orange zest for that extra citrus punch. It039;s completely delicious when mixed together with some cocoa oats topped with dark chocolate pieces. One of our most memorable experiences was a vegan street food tour of Mexico City. 🇲🇽 We ate so many different delicious vegan tacos during our stay, and this taco is inspired by one of Mexico’s most unique flavours; the deep, rich, and dark mole. We serve these vegan mince tacos up with a dollop of avocado sauce, a spoonful of red pomegranate salsa, some crispy lettuce and a few crumbled pieces of vegan feta. New Recipe ✨ Sun-dried Tomato & Black Olive Pesto 🌞 When we first went vegan, there weren039;t many vegan pestos available from the shops. We initially thought what used to be one of our go-to quick weeknight meals would become much more complex 😬 The idea of making our own pesto sauces seemed like a bit of a stretch, but the reality couldn039;t be further from our worries. Making homemade pesto is not only quick and easy, but it also tastes so much better 😍 This recipe is super simple and packed with lovely rich flavour. Recipe Below 👇 ☀️ Sun-dried Tomato & Black Olive Pesto ☀️ Servings: 4 portions - Ingredients 4 sun-dried tomatoes 20 black olives pitted 30 g walnut pieces 15 g basil leaves 1 clove garlic roughly chopped 3 tbsp oil from the sun-dried tomato jar 2 tbsp nutritional yeast 1/2 whole lemon juiced 1/2 tsp salt 1/4 tsp pepper - Method Add all the ingredients to a blender and blend for a few minutes until smooth.
A few weekends ago we spent some time up in London. Whilst we were around and about in central, we decided to visit an old favourite spot @doughnuttime_uk and try something new @cafedenata 😋 Being able to easily get our hands on a vegan doughnut like the ones from doughnut time is something we definitely miss about Living in London. Don’t get me wrong, we love Bristol and all it has to off! There is so much vegan goodness here. But if you really want all the choice in the world, London has everything vegan. And of course, the vegan doughnuts are insanely delicious! 💚 Talking about everything vegan, Portuguese Pastéis de Nata is something we both love. We’ve both had them in Portugal before going vegan, and Freya’s also even had a vegan one out there. I thought I would never get the opportunity to buy a vegan Pastéis de Nata, but London really does have it all.
