Christmas season has been super busy for me and I cannot wait to share some of my exciting projects with you all. While we are super busy, we definitely are eating right and keeping ourselves healthy!
One such quick and simple recipe is Arugula and orange salad. This is @piyushmakharia ‘s recipe, one of the best chefs I know, and who always have wonderful tips and recipes up on this sleeve. 

Sharing the recipe again for you -

🔘In a bowl mix in - 1.5 tbsp garlic infused olive oil (I have the one from @azafran.in ) and 1 tbsp organic honey, 1 tbsp balsamic vinegar, salt and pepper.
🔘Mix this with Arugula leaves and oranges . Garnish with toasted sesame seeds and a little drizzle of garlic olive oil.

As mentioned in the earlier post, sharing a quick and simple recipe of gobi matar ki sabji.. spicy and flavourful, it’s a perfect accompaniment with lentils and ghee laden phulkas 😋

Recipe-
🔘Soak cauliflower florets in warm water with 1 tsp salt for 30 mins.
🔘In a pan (preferably iron pan), heat oil and add 1 tsp cumin seeds, 1/2 tsp mustard seeds, 1/4 tsp asafoetida, 2-3 slit green chillies, handful of chopped cilantro and 1/2 tsp turmeric powder. Add in the florets and sauté of high flame for 5-6 minutes.
🔘Let them cook for few more minutes until tender on medium low flame. Add in 1/2 cup of fresh green peas. Add 1/4 cup water and cover the pan. Let them cook on medium flame until tender.
🔘Add salt, 1.5 tsp coriander powder, 1 tsp red chilli powder, 1 tsp roasted cumin powder.
🔘Mix well until the veggies are well coated. Sauté for a couple more minutes. Add 1/2 tsp garam masala. 
Switch of the flame. Garnish with chopped cilantro.
Enjoy!

It’s been a while a did a full meal post.. and for no reason, I just decided to pamper the husband with all his favorite dishes for lunch. In the frame today - Spinach tomato mixed lentils, cauliflower peas sabji, sautéed spicy beetroot, curd, carrot and radish salad and sweet potato fries and spinach phulkas (flatbreads). 

I would do separate posts for cauliflower sabji and baked sweet potato fries.

Recipe for sautéed spicy beetroot -
🔘Peel and grate 2-3 medium sized beetroots.
🔘Heat 1 tbsp ghee, add 1/4 tsp asafoetida, 1/2 mustard seeds, 1/2 cumin seeds. Add 2 slit green chillies. Add 1 tbsp urad dal and sauté for 2-3 mins.
🔘Add grated beetroot and sauté for 3-4 mins on high flame.
🔘Add salt to taste. Cover and cook for 2-3 minutes.
🔘Switch off the flame - add 1/2 tsp lemon juice and cilantro.
Enjoy!

Recipe for Spinach mixed lentils- 
🔘Rinse and soak for half an hour - 1/4 cup dhuli moong dal, 2 tbsp chana dal, 2 tbsp urad dal, 1/4 cup tuvar dal.
🔘Pressure cook to upto 3 whistles - soaked lentils, 2 chopped tomatoes, 1 slit green chilli, 1 cup chopped spinach, salt and 1/2 turmeric powder.
🔘Let the pressure release naturally, remove cover and put the dal on low flame.
🔘Temper with - 1 tbsp ghee, 2 tbsp chopped garlic, 1 tbsp chopped ginger, 1-2 dried red chilli, 1/2 tsp cumin seeds, 1/4 tsp asafoetida, 1 tsp redi chilli powder.
Garnish with lots of chopped cilantro.
Enjoy!
